A product derived from the Iberian pig, which is undoubtely the best cured ham in the world. Unique and unmistakeable because of both its smell and taste due to a genetic factor which causes the fat to became filtered into the muscular tissue.
It is characterised by its lean leg, the dark colour of its hooves and its long silhoutte. It is covered on the outside by a yellowish coat of soft fat and its meat is lean, shiny and of a pinkish purple colour. The meat is delicately veined by the fat which gives it a marble effect and gives it an imcomparable aroma and texture, this being one of its greatest secrets.
